When my doctor first told me I should probably cut gluten out of my diet, I was pretty convinced that there was no way that was going to happen. Growing up I was the carb queen! My favorite food was pasta, and I loved everything about cookies, bread, and beer (obviously this wasn’t until I was 21). I was sure that the doctor didn’t mean ALL gluten, and if I just were more careful that would do the trick. After about a month of getting hives all over my legs and being so itchy I could barely sit still, I decided to try getting rid of all gluten in my diet to see if that would help. My husband had told me enough times not to continue taking Benadryl to fix the problem, and I finally realized I needed to make a change.
Cutting gluten out of my diet was tricky at first, but the more I did it, the easier it became. Friends and family started getting me cookbooks for holidays, and I just started experimenting. I honestly don’t even miss it most of the time, except when we go to sporting events, when there is really only pizza, hot dogs, and beer available. But after a couple years and several times falling off the bandwagon, I am pretty content with my lack of gluten. I’ve found great gluten-free pasta, some amazing baking books, and some amazing mixes for pizza crust and bread.
For me, I think the most difficult part was finding food that was gluten free, but still tasted good. There were lots of nights where I would grab a new type of pasta that they carried at the local grocery store, and it would either turn to paste or mush. I hope to share some of my favorite tips and recipes so that other people trying to eat gluten-free can avoid the kitchen fails that I did.

This is one of the first cookbooks I received from a friend as a Christmas present and I LOVE it!!! So far, I have yet to find a recipe that isn’t delicious.
